I first had this easy kale salad at my friend Kelly’s house over Christmas. We all raved over it so she shared the recipe, which she had gotten from a friend who clipped it from Rachael Ray’s magazine.

Ingredients
  • 1 tablespoon sesame oil
  • ½ cup olive oil or sunflower oil
  • ¼ cup mango chutney
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, chopped
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 3 bunches kale, chopped and stemmed (about 16 cups)
  • 1½ - 2 cups mixed chopped dried fruit (apricots, dates, raisins, cranberries)
  • 3 tablespoons roasted sunflower seeds
Instructions
  1. In a blender, puree the oils, chutney, lemon juice, garlic, salt, and pepper until smooth.
  2. In a large bowl, toss the kale, dried fruit, and sunflower seeds with the dressing.
  3. Season with salt and pepper as needed.
