If you’ve come from a line of Southern cooks, you probably cook most things without a recipe. Just throw in a little of this and a little of that and you have dinner on the table. That has been my greatest dilemma with this website…just trying to figure out amounts of ingredients for things like meatloaf that for years I’ve just thrown together.

Some dishes, however, just don’t require a recipe. Even the most novice of cooks can pull together many appetizers, salads, main dishes and sides. This tomato salad is a perfect example. It’s so simple: tomatoes, onions, balsamic reduction, olive oil, salt and pepper.

I’ve been buying a little bag of Village Farms authentic mini San Marzano tomatoes and love them for this salad, but you could use regular grape or cherry tomatoes. Of course, when tomatoes around here are ripe then I will buy at the local farmer’s market, but until then, I’m buying the tastiest tomatoes I can find in the grocery store.

How to Make Tomato Salad Recipe

These tomatoes are slightly larger than regular grape tomatoes, so I like to cut them in quarters.

Just grab a couple of handfuls, depending on how many people you’re serving, and chop a few tomatoes into smaller bite-sized pieces.

Then add a small handful—maybe a quarter cup or so—of chopped red onion. You don’t want to add too much onion or it will overpower the tomatoes. You could also use a shallot for even milder flavor.

Next, drizzle a little extra virgin olive oil, add a little balsamic reduction and salt and pepper.

Stir gently to mix the flavors and then let the salad sit at room temperature for a while, stirring occasionally.

That’s it…wonderful, easy, delicious tomato salad that will be a perfect side dish for just about anything!

Tomato Salad

A light and flavorful, easy tomato salad featuring tomatoes, onion, and balsamic reduction that works well with grilled meats or vegetables.

Ingredients 

  • 24 Grape tomatoes, halved or quartered
  • 2 tbsp Red onion, chopped
  • ½ tbsp Olive oil
  • 1 tbsp Balsamic Reduction
  • Salt
  • Pepper

Instructions 

  • Place tomatoes and onions in a bowl. Drizzle olive oil and balsamic reduction over tomatoes. Add salt and pepper to taste.
  • Stir gently then let sit at room temperature for at least thirty minutes.
